Fried Squirrel

  1. Cut desired amount of cleaned and dried squirrel into pieces
  2. Milk
  3. Egg (1 for every 2 average sized squirrel)
  4. Flour
  5. Salt and Pepper (I like spicy, so I use Cayenne Pepper)
  6. Your choice of Cooking Oil

Soak meat in milk for at least 1 1/2 hours, in refridgerator. Combine flour and seasonings in a bowl. In another bowl, beat egg. Heat cooking oil in skillet to 375 degrees (use enough to have approximately 1/2 inch in skillet). Roll squirrel pieces in egg and then in flour mixture to coat. Place coated meat in heated oil and fry (covered) until golden brown, turning occasionally to avoid scorching or sticking.Remove meat and let drain on a plate covered in paper towel to remove excess oil. Now serve with favorite side dishes. (Great served with fresh gravy and biscuits)
